~ Cheesecake (LCHF) "Fat Bombs"

Cheesecake (LCHF) "Fat Bombs"

16 oz cream cheese
2 eggs
2 Tbsp. sour cream
1/2 cup powdered Erythritol
1 tsp. stevia liquid
1 tsp. vanilla extract
1 tsp. almond extract
Dash Himalayan Pink Salt

Put all ingredients into a food processor...blend well...pour into sprayed lined silicon muffin tins... Bake 375 degrees (in a toaster oven for 22-25 minutes)... (18-22 minutes in my regular oven) Just watch them, since oven temps vary... I placed my silicon muffin cups in a baking pan with a little water in it... Be care to not get water in the muffin cups.... Be careful to not OVERCOOK!.....They will still be a bit soft, but firm up as it cools.... Let cool...refrigerate...Makes 12 muffins of yummy cheesecake...

    1. Hope you like them as much as my family does...... Make sure to powder your Erythritol very fine..... And be careful to not over cook....every oven is so different...so watch them!....Enjoy! :)

    4. Continue reply.... Using flat blade)... Or in a clean coffee grinder....blending only small amounts at a time....it becomes very fine like powdered sugar....I blend it all and always use it this way.... Blends and mixes so much better, powdered... Happy cooking! :)

  4. What actually is Erythritol? Is there anything that can substitute this. I am from Nepal and I think Erythritol is not available.

    2. Erythritol is sugar alcohol. Like all artificial sweeteners, some can taste an aftertaste, some can't tell the difference between it and regular sugar. Sadly, I have trouble with Stevia, Splenda, Nutrasweet, and Sucralose. It makes it harder to make certain recipes. So glad my Target sells Swerve Granulated AND Confectioner as well as Monkfruit in the Raw.
